Mom’s Apple Dumplings were so delicious that these were the choice of both Mary and Rudy for their birthdays. Mary remembers that Mom let her eat a leftover dumpling with cream on it for breakfast on the day after her birthday. Rudy said that she never cared what else we had for dinner on her birthday, so long as it included buttered rice and Apple Dumplings for dessert.

8 small or 6 large firm, ripe apples – peeled and cored (Gala, Braeburn, or Golden Delicious are good choices.)
2 tbsp. butter, divided into 6 or 8 parts
6-8 tbsp. granulated sugar, divided
Cinnamon for sprinkling
Syrup
3 c. water
2/3 c. granulated sugar
1/2 tsp. cinnamon
1 tsp. vanilla extract
6 tbsp. butter
